The United Nations cultural agency (UNESCO) declared Peruvian ceviche, an ancient marinated seafood dish, part of humanity's intangible cultural heritage. To ceviche restaurant owner Roberto Madrid, this dish, which has been eaten in the country for more than 2,000 years, "represents all of Peru," as its production includes the work of farmers, fish breeders and artisanal fishers.
