In Bou Saada, also known as 'the city of happiness', a town located at the gateway to the desert, to the south-east of the capital Algiers, you can enjoy a 'jazwa coffee' prepared in a copper 'Turkish' coffee pot to which the inhabitants add aromatic herbs picked in the desert surroundings. During Ramadan, the locals enjoy it after the Tarawih prayer, the evening prayer during the month of Ramadan. "We prepare it in the traditional way and add a few herbs from our desert region, such as white wormwood and thyme", explains Mohamed Jouidar, the manager of the "café de la brise", with pride.
