At Toya, which has one Michelin star, the menu moves to the rhythm of the seasons and all of the restaurant's produce comes from the surrounding areas. It is a deliberate ecological approach by 34-year-old chef Loïc Villemin, who believes the sector has been sending the wrong message to its customers by saying "we can have strawberries all year round, any vegetable all year round", adding, "we have to be able to live with the seasons".
