Description
A zero-waste restaurant in east London serves diners a range of invasive species, aiming to highlight the damage they do to the UK environment - and at least slightly reduce their numbers. “These are all forces of destruction” explains ‘Silo’ founder Douglas McMaster, but “they're all edible, they're all delicious”. Over 100 miles north, by a small river just outside Derby, Karim Vahed, England manager at conservation group Buglife, explains that “invasive non-native species are a major threat to biodiversity”. But consuming them isn’t something he "would encourage", due to the risk that it might inadvertently encourage cultivation and further spread of the species. IMAGES AND SOUNDBITES
