For decades, Maria Guadalupe Cortes and her sister, Maria del Pilar, have been running their offal taco stall in Tepito, a notoriously rough Mexico City neighborhood. The sisters are two of the few women who run taco stalls in the Mexican capital, where the laborious chore of chopping meat for hours continues to be a male-dominated field.
