The restaurant of Paul Bocuse, one of France most beloved chef, celebrates its 100th anniversary this year. In 1924, Bocuse's grandparents bough the Auberge de Collonges-au-Mont-d'Or near Lyon which then became a reference in the culinary world under Paul Bocuse's leadership, wining Michelin's three stars for a record 55 years. Today, six years after the death of the one dubbed "the pope of gastronomy", if the restaurant's menu features lighter, healthier fares, iconic dishes such as truffle soup remain.
