Associated with the freshness of a summer aperitif, rose wine in Provence is paradoxically threatened by climate change, in particular global warming, a phenomenon that is particularly pronounced around the Mediterranean. The higher temperatures produce more sugar in the grapes and therefore a higher alcohol content during vinification, even though this wine is particularly appreciated for its lightness.
