Lionel Bonnamy, master pastry chef and winner of the "2025 Best Galette in Greater Paris" competition, believes that "a quality recipe, mastered, with noble, high-quality raw materials" is the secret. With an average of more than 800 galettes sold per day, the pastry chef dedicates 9 of his 14 employees exclusively to making galettes des rois. For a modern touch, Othman El Ouraoui, a pastry chef who has worked with Cyril Lignac and at the Shangri-La Hotel, creates Moroccan and Japanese-inspired galettes des rois. IMAGES AND SOUNDBITES
