Diaz's Family Crepe Recipe:
Ingredients: 5 Eggs | 4 tablespoons melted butter | 1 oz olive oil | 1.5 qt milk | 15.5 oz all-purpose flour | Pinch of salt
Instructions:
Mix batter and let rest for 30 min to allow the flour to properly hydrate for smooth crepes.
Melt ¼ tablespoon butter in an 8-10 inch round sauté pan over medium heat.
Pour ¼ cup of chilled batter into the pan.
Allow it to cook without touching for one minute or until the edges slightly brown.
Carefully slip a thin spatula under the crepe and gently flip to the other side.
Let it cook for another 45 – 60 seconds.
Once cooked, transfer to a plate, add toppings of your choosing, and indulge in the culinary masterpiece!
