They’re soggy. They just limp over. You need really good olive oil.” Gamoran also says it’s important to make sure your oven’s temperature is high enough. “You need to turn your ovens up,” he said. “450 degrees, none of this 375.” Once the homemade fries are done, you’ll top with a homemade crema, bacon and scallions, and add chilis if you want a kick. “When you’re serving this, you want it to kind of go up towards whoever is eating it,” Gamoran said. “That’s a secret of restaurant food.
