Buying groceries and feeding your family each week can really add up, but the Safeway for U app allows you to easily plan your meals and find deals.
Safeway chef ambassador Joel Gamoran says using the app and planning ahead can save you money and help you find easy meals to prepare. He suggests looking at the app before you head into Safeway to get a game plan.
“That is how we should shop,” he said. “It’s not like ‘Let’s just walk in and see what looks good’ because then what happens is the groceries start to add up.”
Safeway wants to help you use your food well, so the app provides shoppable recipes and personalized offers that can allow you to feed your family for around $10 per meal. Gamoran has a delicious, simple and cost-efficient recipe for pork bibimbap bowls.
“To save money, a lot of people think of fried rice or things like that,” he said. “This is just a refreshing take, and it is really easy to make.”

Pork Bibimbap Bowl for under $10
Ingredients:
Pork Loin:
1 lb boneless pork loin, thinly sliced
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp gochujang (Korean red chili paste)
2 garlic cloves, minced
1 tbsp honey
1 tbsp rice vinegar
1 tsp grated ginger
Quick Pickles:
1 cucumber, thinly sliced
1 red bell pepper, thinly sliced
½ cup rice vinegar
2 tbsp sugar
2 tsp salt
Bibimbap Bowl
4 cups cooked rice (white, brown, or cauliflower rice)
2 cups spring mix
4 eggs
2 tbsp vegetable oil (for frying eggs)
1 tbsp sesame seeds
2 green onions, sliced
Gochujang, for serving
Instructions:
Marinate the Pork Loin:
In a medium bowl, combine soy sauce, sesame oil, gochujang, minced garlic, honey, rice vinegar, and grated ginger. Mix well.
Add the thinly sliced pork loin to the marinade, ensuring all pieces are well-coated. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
Quick Pickled Cucumbers/ Pepper:
In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
Add the cucumber and bell peppers and let them sit for at least 15 minutes.
Cook the Pork Loin:
Heat a large skillet over medium-high heat.
Add the marinated pork loin slices and cook until fully cooked and slightly caramelized, about 3-4 minutes per side. Set Aside.
Assemble the Bibimbap Bowls:
Divide the cooked rice among four bowls.
Arrange the cooked pork loin, quick pickled cucumbers, quick pickled red bell pepper, and spring mix on top of the rice.
In a separate skillet, heat vegetable oil over medium heat and fry the eggs until the whites are set but the yolks are still runny.
Place a fried egg on top of each bowl.
Garnish with sesame seeds and sliced green onions.
Serve with a side of gochujang for added spice.
