10News Reporter Lauren Davis shares her recipe for some delicious twice-baked potatoes.
Prep Time: 20 mins
Cook Time: 1 hour and 10 minutes
Total Time: 1 hour and 30 minutes
Total Servings: 12
For this recipe, you’ll need:
• 6 russet potatoes
• 1 ½ Tbsp Olive oil
• 5 Tbsp butter
• ¾ a cup of sour cream
• ½ cup of milk
• 4 green onions
• 3 pieces of bacon
• 1/2 tsp black pepper
• ½ tsp salt
• 1 3/4 cup of shredded cheddar cheese
Instructions:
1. Preheat your oven to 400 degrees Fahrenheit. As your oven is warming up, wash and dry your potatoes. Prick each potato with a fork several times.
2. Place the potatoes on a baking sheet lined with aluminum foil. Drizzle olive oil on the potatoes. Use your hands or a brush to coat them completely. You can also season the potatoes with a pinch of salt.
3. Once the oven is heated, bake the potatoes for 50 minutes to an hour, or until the potatoes can be pierced with a fork. The smaller the potato, the shorter the cooking time. At this time, you can slice your green onions and set them aside.
4. While the potatoes are baking, you can cook bacon in a skillet, or put it in the oven on a foil-lined baking sheet for 20 minutes. Cook the bacon until it’s brown and crispy. Drain the cooked bacon on a paper towel-lined plate. Once the bacon is cool enough to handle, roughly chop it.
5. When the potatoes are done baking, remove them from the oven and allow them to cool enough to be handled. When they’re ready, slice them in half lengthwise. Scoop out the potato flesh, leaving about ¼ an inch rim.
6. Place the scooped-out potato flesh into a large bowl. Add the milk, butter, sour cream, salt, and pepper. Use a potato masher on hand mixer to blend until light and fluffy.
7. Next, add all your bacon, half your cut green onions, and ¾ a cup of your shredded cheese. Fold these ingredients in.
8. Fill the potato skins with this mixture. Then, sprinkle the remaining cheddar cheese on top of each potato.
9. Bake the potatoes in the oven for about 20 minutes, or until the cheese on top of each potato is melted.
10. Top with the remaining green onions and serve. Enjoy!
