Roasted cherry tomato and feta pasta has become an internet favorite, and with just a few ingredients, it’s an affordable and easy dinner.
“It’s super simple but very elevated and impressive,” said Joel Gamoran, Safeway chef ambassador.
To start, Gamoran has a trick for boiling spaghetti.
“If you take spaghetti, and you kind of wrap your finger around it on one side and on the bottom as well, and then twist it and let go, it spreads, and it doesn’t stick to each other,” he said.
For the sauce, you’ll add cherry tomatoes to a tray, as well as sliced fennel. You can then use Gamoran’s advice to smash garlic with a knife lightly, pop it and chop it up.

After you use Gamoran’s trick, add the garlic to the tray and drizzle olive oil generously over top of the ingredients and add a block of feta. Bake in the oven at 450 degrees for 25 minutes.
When you get it out of the oven, you’ll add some pasta water and start to break up the ingredients into a sauce.
“It just becomes this unbelievably, kind of creamy, fennely, tomatoey, perfect little sauce, and you just keep working it,” Gamoran said.
Gamoran recommends sticking with seasonal ingredients, and the Safeway app can help you find those.
He also has a tip for reheating your leftover pasta perfectly. Put pasta water in an ice cube tray and freeze it. When you’re reheating your pasta in the microwave or oven, add a cube.
“That little cube will make it so creamy and will kind of hydrate the pasta, and that is a proper way to reheat pasta,” he said.

Tomato Feta Pasta
Servings: 4
Prep Time: 15 minutes
Cook Time: 35 minutes
Ingredients:
2 pints cherry tomatoes
2 cloves garlic, peeled
1 small fennel bulb, thinly sliced
1⁄4 cup olive oil
1⁄4 teaspoon salt
1⁄4 teaspoon black pepper
8 oz feta cheese (block preferred)
8 oz dried pasta of choice
1 bunch fresh basil
Instructions:
1. Bake:
Preheat the oven to 400°F.
In a 9x13 baking dish, toss the cherry tomatoes, fennel slices, and whole garlic cloves with olive oil, salt, and black pepper.
Nestle the block of feta in the center and bake for about 35 minutes, or until the tomatoes burst, fennel softens, and the feta is creamy.
2. Cook the Pasta:
Meanwhile, cook the pasta according to package instructions.
3. Assemble:
Remove the baking dish from the oven and use a spoon to stir everything together, bursting the tomatoes, and breaking apart the feta as needed. Add the cooked pasta, stirring until well combined.
Tear in fresh basil leaves and toss before serving.
